10 Minute Easy-Peasy Chia Jam

This is my most favourite jam EVER! It takes 10 minutes to make and I can control the amount of sweetness as I usually find shop bought jam just too sweet. It's packed full of naturally sweet fruit and the chia seeds act as a natural pectin to thicken the jam to the perfect consistency.

This jam is just perfect for spreading on toast, toppings on cereals and puddings. As it's so healthy, you can afford to be generous with a huge spoonful!


Naturally sweet jam packed full of fruit!
Recipe (Makes 2 large jars)

500g bag frozen fruits - a mix of blackcurrants, redcurrants, strawberries but you can choose whichever fruits you prefer
3 tbsp chia seeds
2 tbsp honey (add more/less to taste)
1 tsp cinnamon
1/2 tsp nutmeg
star anise (optional)

Method:
  1. Put the fruits in a saucepan and add about 100ml cold water.

  2. Add the spices.

  3. Heat on a medium heat until it starts to bubble and then simmer for about 10 minutes until the fruit starts to break down.

  4. Add the honey. I tend to reduce the amount of honey and add a small amount of sugar free syrup. If you have some, it's an option. You can also use other sweeteners such as agave, rice syrup, date syrup, maple syrup.

  5. Once the fruit has softened, stir through the chia seeds. The jam should be fairly runny at this point and will thicken as the chia seeds absorb the liquid.

  6. Pour into clean jars and cover.

  7. I store mine in the fridge to thicken and it keeps for a few weeks.
