15 Minute Tasty Quorn Curry

This is my first time cooking with Quorn and wow - what have I been missing! This curry was so delicious. My daughter Emma (@thefitlondoner) loves to cook with Quorn and bought me a pack to try.

Just a few store cupboard ingredients makes up this very healthy curry. I made this really to have for lunches but it would make a lovely dinner too.

A delicately spiced creamy tomato and red pepper curry
Recipe (Makes 4 portions)

500g Quorn pieces
500g Passata
1 vegetable stock cube dissolved in 100ml hot water
15 squirts Frylight oil
1 red pepper, finely diced
3 spring onions finely sliced
2 tsp ginger and garlic paste (or you could use fresh)
2 tbsps Pataks Balti curry paste
100ml 0% fat plain yoghurt
Good handful chopped fresh coriander

Method:
  1. Heat the passata on a low boil and add the veg stock.

  2. Add some frylight to a large frying pan and add the chopped pepper and spring onion and cook for a few minutes.

  3. Add the ginger and garlic paste and fry for a few more minutes.

  4. Add the Quorn pieces and fry for a few minutes.

  5. Add the passata sauce and then simmer for about 12 minutes.

  6. Take off the heat and stir through the yoghurt and the coriander.

  7. Serve with salad, veggies, rice, potatoes or bread.
