Squidgy, naturally sweet apple oat bars - perfect to keep in the fridge for when you need a mid morning or early afternoon snack.
Recipe (Makes approx 24 bars)
280g oats (I use Waitrose oats with added wheatbran)
150g spelt flour (or normal flour)
2tsp baking powder
pinch salt
2tsp cinnamon
165g grated dessert apple
140g chopped dessert apple (approx 4 apples in total)
2 eggs (or flax eggs)
2tsp vanilla essence
85g maple syrup
2 tbsps coconut oil
270ml unsweetened almond milk (or alternative)
Method
Mix the dry ingredients together and whisk in the wet ingredients.
Stir in the grated and chopped apple until throughly mixed.
At this stage the mixture will look quite wet but that's fine. Pour into a square tin (lined with baking paper). Option to top with coconut sugar and extra cinnamon.
Bake for 30-35 minutes at 180 degrees until golden brown.
The bars are not very sweet, so if you have a sweet tooth, maybe add some more maple syrup or sugar alternative. I don't like them too sweet because I like to dip mine in nut butter! You can also add some dried raisins to add extra sweetness.
