These are great with a cuppa! At just 115 cals per bar, you can have one of these at any time of the day. Full of oats, bananas and natural sweetness from the dried fruit.

Apricot, Date & Coconut Bars

When your bananas are overripe - this is the perfect recipe to use them up. Made with oats, dried apricots, dates and nuts.

Just a few ingredients away from making these healthy treats!
Recipe (Makes 16 bars)

300g oats
50g dried apricots, chopped
50g dried dates, chopped
30g flaked almonds
3 ripe bananas, mashed - make sure they are very ripe to add the sweetness
1 tsp cinnamon
1.5 tsp vanilla essence
10g desiccated coconut

Method:
  1. Grease and line a shallow rectangle tray approx 25 cm x 16cm (traybake size).

  2. Mash the bananas and add the chopped fruit and nuts.

  3. Add the cinnamon and vanilla essence.

  4. Spoon into the tin and use the back of a spoon to flatten down the mixture until it's nicely compressed. This makes it easier to cut into bars.

  5. Sprinkle with the coconut.

  6. Bake at 160 degrees (fan) for about 35 minutes until golden brown.
