Choccy Popcorn Bites

These Choccy Bites are a revelation! OMG - they are SO good! I've made puffed quinoa squares before but didn't have any puffed quinoa, so I thought what can I use? And I thought - POPCORN! So I popped some and whizzed it up in the food processor and voila! The choccy popcorn bite was born! Please do try them - they are delicious and ULTRA healthy!

Choccy Popcorn Bites - A treat without the guilt!

Such a simple recipe. Just pop some popcorn and add your favourite ingredients!


You will love these Popcorn Bites! Little nuggets of yumminess! - and only 148 cals per bite!
Recipe (Makes 12 large bites)

100g popcorn kernels
1/2 tbsp oil - I used coconut oil but you can use light olive oil or sunflower
50g raisins - or you can use sultanas, apricots, dates, figs, dried cherries
80g raw almonds, chopped
25ml maple syrup
3 very ripe bananas, mashed
2 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
70% dark chocolate, melted (I buy mine from Lidl - lovely chocolate and super cheap)

Method:
  1. Heat the oil in a large saucepan and add the popcorn. Give it a quick stir. Turn the heat to medium, put the lid on and keep shaking the pan until you hear the popcorn start to pop. If it's not popping, turn up the heat. Adjust the heat so the popcorn is gently popping. Keep going until the popping slows down, turn down the heat. Most important is to keep shaking the pan so you are moving the popcorn so the kernels don't burn at the bottom. If you want a lazy cheat, you can buy pre made natural popcorn, but honestly it's worth trying to make your own, it's so easy and quick.

  2. Once the corn has popped, put it in the food processor and whizz until it's in little pieces. Don't over-process otherwise you'll have dust!

  3. Tip it into a large bowl and add all of the other ingredients, apart from the chocolate. Mix well, it should be nice and sticky.

  4. Put into a lined shallow square tin and press down really well with a spoon, working well into the corners.

  5. Bake at 180 degrees for 20-25 minutes.

  6. Let the bites cool in the tin, then turn out and cut into 12 pieces.

  7. Finally, melt the chocolate gently in the microwave, and dip each piece halfway into the chocolate and leave to set on a cooling rack.

  8. I like to wrap mine individually in baking paper and then store them in a sealed container.

  9. These keep really well so you shouldn't need to store them in the fridge.
