Crunchy Chocolate & Nut Protein Bars


I love a protein bar but what I don't love is buying the shop bought ones that are full of ingredients I've never heard of! So I set out on a quest to make my own...and here's the recipe! Don't be put off by the ingredient list, see notes below.


Full of goodness and will cost you half the price of the shop bought ones!


10g protein per bar...nutty, chocolately and yummy!

Ingredients: Makes approx 20 bars. You will need some silicone bar moulds. See notes below.

  • 200g blanched whole peanuts, chopped

  • 180g soya protein crispies

  • 50g brown puffed rice

  • 100g desiccated coconut

  • 100g dark chocolate (70% cocoa solids), roughly chopped

  • 25g cocoa (or cacao) powder

  • 10g tapioca starch

  • 100g maple syrup

  • 100g honey

  • Pinch of salt

Method:




  1. Preheat oven to 160ºC (fan oven).

  2. Chop the peanuts - keeping them pretty chunky.

  3. Add to a large bowl and add all of the other ingredients (apart from the honey and maple syrup) and give it a good stir.

  4. Heat the honey and maple syrup until it's warmed through and then add to the bow. Stir well so the mixture starts to come together.

  5. Place your moulds on a baking tray. No need to grease the silcone moulds.

  6. Using a small spoon, carefully fill up the moulds halfway with the mixture. Press down with a plastic spatula (don't use metal otherwise it will stick), and then fill them up again. Press down well again. This takes quite a bit of time, because you want to make sure it's well-compacted. If it isn't - then your bars may break up when you take them out of the moulds. Also don't leave the mixture lying around otherwise the honey and syrup will start to set and it'll be more difficult to handle.

  7. Bake in the oven for about 20 minutes until golden.

  8. Leave to cool in the moulds until cold.

  9. Store in an airtight container. These will keep for at least a week. And they shouldn't go soggy like some puffed rice recipes. These bars are crunchy rather than chewy.

If you want an even more nutty flavour/texture - add a few more nuts! If you like it sweeter, add more honey or maple syrup. More chocolately - add more...you get the idea. Play around!

Bar Moulds: I bought mine on Amazon. I started off with a slightly shallower mould but ended up buying a couple more that were slightly deeper. This gave me a protein bar that weighs about 45g - similar to the shop-bought ones (I like my bars to last!).

I bought the ingredients in large quantities (mainly 1kg packs), so they may seem expensive as a first purchase. But once you make your batch, they work out costing 40p each, instead of 75p for the shop bought ones and the ingredients will last you quite some time.


Tapioca starch - I wasn't sure about the need to use this, but I decided to use after some research. It helps to bind the mixture and give it a crunchy texture. No one wants a soggy cereal bar! It's pure gluten-free starch and has no other nasty ingredients.


My own version of these bars (which used to be my favourite)! Tastier and cheaper and you know what's in them!






Nutritional Info (approx): per bar: 206 calories, 11g fat, 17g carbs, 10g protein, 10g sugar.
