Fruit & Nut Energy Balls

This is a fantastic tried and tested recipe which never fails! Passed to me by my tennis friend Lilja, I love making a batch of these to keep in the freezer for pre and post exercise snacks or just whenever you fancy a healthy snack!

Energy ball
A naturally sweet and tasty energy ball

Suit your mood and make different sizes!


Recipe (Makes approx 21 balls)

15 dried dates
10 dried apricots
50g cacao nibs
2 cups oatmeal (330g) - or you could use oats
1 cup of nuts - you can mix and match here but I used almonds
1/3rd cup (50g) dried fruit - cranberries or raisins
2 tbsp coconut oil, melted
2 tbsp honey
Water to mix
Desiccated coconut or cacao powder (optional)

Method:
  1. Put all the ingredients in a food processor and pulse together to gradually mix. Then increase the speed a bit to blend and finally add a few tablespoons of water until the mixture starts to bind together. (If your dates and apricots are very dry, just soak them in some boiling water for 10 minutes).

  2. Tip into a mixing bowl and start to form the mixture into balls.

  3. If you wet your hands it helps to stop the mixture sticking to them. I like to make them different sizes to suit all occasions!

  4. You can then roll them in coconut or cacao powder.

  5. Store in the fridge or you can eat straight from the freeze (they are lovely to nibble on cold!).
