It was hard to give these a name because they've got a bit of everything in them! It doesn't mean you have to as well - just throw in any overripe fruit you have at home and you can use any dried fruit you have to hand.
A great recipe for using up overripe fruit such as bananas. It's great for mixing and matching whatever you have at home - seeds, dried fruit or nuts. Easy to make and bake - give it a try! Perfect for breakfasts on the go - or a snack. You could even serve these warm with some greek yoghurt.
Moist, and full of fruity flavour - a perfect healthy treat!
Recipe (Makes 16 squares)
250g oats
50g oatmeal - if you don't have oatmeal, just add 50g more oats
4 ripe bananas, mashed - make sure they are very ripe to add the sweetness
Additional fruit - I added a chopped pear, nectarine and a grated apple (all with skin) but you could use any soft fruit including berries
85g mixed seeds - I used a mixture of pumpkin, sunflower and sesame. You could swap for nuts if you prefer
100g raisins - or any other dried fruit such as dates, figs, or apricots
1.5 tbsp coconut oil, melted
1 tbsp maple syrup - if you wanted a lower sugar content you could skip this. It's sweet enough anyway because of the fruit
2 tbsp almond butter
Grated dark chocolate (optional)
Method:
Grease and line a square 20cm tin.
Mash the bananas and add the other chopped fruit, followed by the seeds, oats and oatbran (if using).
Melt the almond butter with the maple syrup and coconut oil in a small pan until melted and add this to the oat and banana mixture. The mixture should be fairly soft but if it's too runny, just add a few more oats.
Pour into the tin and level with a knife.
Grate some chocolate over the top is you wish or you could fold through some dark chocolate chips into the mixture first.
Bake at 140 degrees fan for about 55 minutes - 1 hour until golden brown.
