Healthy Banana Bread

I do love a banana bread as you may know if you follow me on Instagram! Yesterday a friend gave me the blackest bananas and so I had just had to make this banana bread before they were destined for the bin! Keep giving me those black bananas!

Healthy Banana Bread - Easy Peasy to make


Naturally Sweet Banana Cake with a Hint of Chocolate and only 120 cals/slice!
Recipe (Makes 1 large loaf - approx 15 generous slices)
Original recipe from Sophie's Healthy Kitchen

Dry ingredients: 280g spelt flour

80g raw sugar (dark brown)

1/4tsp salt

1 tsp baking powder

1 tsp baking soda


Wet Ingredients

2tbsp coconut oil melted

3 very ripe bananas (approx 250g).

If you use underripe bananas it won't taste great!

1 tbsp apple cider vinegar

260ml almond milk (or any milk of choice)

5 squares 70% dark chocolate (I buy mine from Lidl - lovely and super cheap) (optional)


Method:
  1. Combine all of the dry ingredients in a mixing bowl.

  2. Gradually add milk until blended. Add the coconut oil.

  3. Mash the bananas well and add to the mixture.

  4. Pour into a 2lb greased and lined loaf tin (if you make a lot of loaves you can buy loaf liners on Amazon - takes away all the headache of lining the tin).

  5. Break the dark chocolate into shards and push into the mixture. You can also add an extra sliced banana to the top if you wish.

  6. Bake at 160 degrees for an hour - you might have to cover the top of the bread with foil towards the end of cooking to prevent it browning too much. Let it cool in the tin for about 10 minutes and then turn out on a cooling rack. Slice when it's completely cool - if you can wait that long!

  7. Eat on it's own or top with yoghurt, nut butter or jam.
