Raspberry and Walnut Oaty Biscuits

Whenever I need to use up overripe bananas - these are one of my go to recipes. So quick and easy to make with just a few ingredients - and the bananas and other fruit means you don't need to add much other sugar

I like to use up whatever I have to hand so feel free to substitute the raspberries for apricots, dates, raisins and the nuts for almonds, pecans, or cashews. I also make them different sizes depending on how big a bite I want to have!

A naturally sweet treat with a cuppa!
Recipe (Makes 12 biscuits)

175g Porridge oats
25g Oatbran (or just use more porridge oats if you don't have)
2 Overripe bananas, mashed
50g Walnuts, chopped
1 tbsp Honey
1 tsp Cinammon
85g Raspberries (or substitute for something else)

Method:
  1. Mix porridge oats, oatbran and cinnamon.

  2. Add the mashed bananas, honey and mix in the fruit and nuts.

  3. Place heaped spoonfuls onto a lined baking tray (you will need 2). Make them as big/small as you like, just flatten them down a bit so they crisp up in the oven. They don't spread, so you don't need to leave much space between them.

  4. Bake in the oven at 170c for about 30 minutes or until nice and brown.

  5. They are best eaten within in a few days.

These biscuits have a soft texture rather than crispy so not really for dunking!
