Spiced Apple Squares

This is probably the tastiest cake I've ever made. I've been on the lookout for some leftover sourdough recipes because I just can't bear to throw it away. This is my second attempt of a few variations and it's just delicious. The flavour is a mixture of hot cross buns (the sourdough does this), and apple strudel. Give it a try!



Soft Spiced Apple Squares - Makes 16

Ingredients:


Dry Ingredients

  • 130g spelt flour (or any flour of your choice)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1.5 tsp mixed spice

Wet Ingredients

  • 285g sourdough discard

  • 1 egg

  • 50g oil - I used sunflower oil

  • 70g honey (or maple syrup)

  • 2 large apples cored and diced (no need to peel). I got lazy and blitzed them in the food processor.

Oaty Topping

  • 50g oats

  • 2 tbsp coconut oil, melted

  • 35g chopped pecans (or nuts of your choice)

  • 1/2 tsp cinnamon

  • couple tsps demerara sugar (or sugar alternative)

*Sourdough Discard: this recipe uses a fair bit but it really adds to the flavour and texture. I keep any (unfed) leftover sourdough each week in a separate container in the fridge and although it does look a bit yucky when you get a brown liquid on top - it's all quite normal so don't worry about it. You can either pour it away or just mix it in. It just adds a bit more of a sour flavour. I quite like it so I just mix it in. 285g is my leftover after 3 weeks, but if you are in a hurry, you can just make more sourdough starter to use for this recipe. I'm not sure what it would be like without the sourdough starter. You'd need flour and probably some liquid also - milk or water. The sourdough gives it a lovely doughy starter.


Method:

  • Combine the dry ingredients in a bowl.

  • In another bowl, gently combine the egg with the honey and oil.

  • Make a well in the centre of your dry ingredients and add the sourdough starter, the egg, honey and oil mixture. Fold in the chopped apple.

  • Make the oaty topping: Mix the oats, melted coconut oil, sugar and chopped pecans.

  • Pour the mixture into a small square baking tin lined with baking paper. Top with your oaty crumb mixture.

  • Bake at 170ºC (fan oven) for about 40 minutes until browned.

  • Leave to cool slightly and then lift onto a cooling rack. Wait until totally cool before cutting into bars.
