I bought a huge pack of chicken mini fillets today to prep some meals for lunches. This is such a simple recipe with some really tasty ingredients and only 215 cals per serving. Just add carbs and veggies to make a complete meal.
I couldn't wait for tomorrow's lunch - I had some for dinner and was in such a hurry to eat it, I didn't manage to cook any veg! But I had loads of veggies for lunch today, so all good!
Simple ingredients make this a very tasty lunch or dinner!
Recipe (Makes 4 portions)
350g chicken breast mini fillets (I got mine from Lidl)
400g tin of chopped tomatoes
1 tbsp tomato puree
250g mozzarella Light, grated
Few sprays of Frylight
1 tbsp mixed dried herbs
Salt and pepper
Few squirts of Sriracha sauce (to add a bit of heat - optional)
Handful of fresh basil leaves, torn
Method:
Season the chicken with salt and pepper
Spray some Frylight in a large frying pan
Add the chicken and cook on a high/medium heat until browned all over (about 5 mins)
Add tinned tomatoes, dried herbs and simmer for about 5-7 minutes.
Adjust seasoning and add hot sauce if required.
Sprinkle over the mozzarella and cook under a hot grill until starting to bubble.
Take off the grill and gently work through the fresh basil leaves until they start to wilt.
Serve with veggies, salad, rice or potatoes.
